We love it all year round for a delicious Sunday roast dinner with all the trimmings, or to use up leftover slices of ham for lunch.

How to Prepare a Honey Roasted Gammon Joint

The recipe card specifies how long to boil and roast a 2kg gammon joint. However, we have also provided cooking times per kg for all gammon joint sizes.

Is it better to boil or roast a gammon joint?

You can boil or roast a gammon joint, but we find that combining the two methods produces moist meat from boiling. With a delicious sticky roasted honey glaze coating from oven roasting

Boiling a Gammon Joint takes less time than roasting alone and results in moister Gammon slices.

However, in order for the glaze to have the best finish, it must be roasted in the oven for a short period of time.

Gammon boiled in a pan or pressure cooker, then finished in the oven with a delicious sticky glaze.

How to Boil Gammon

When boiling gammon, cover it with water and add herbs, peppercorns, onion, or vegetables if desired.

We like the taste of the ham as is, so we added flavor with the glaze instead. So we keep it simple by using only a couple of bay leaves.

Make sure to submerge the gammon joint in water to cover the top; if you lose water during cooking, add more.

It should also be noted that, despite the name "boiled ham" or "gammon," it should not be boiled for the entire time; instead, bring it to a boil and then reduce to a simmer.

How long does it take to boil a gammon joint per kg?

So, regardless of the size of the joint, you now know how long to boil gammon. It's time to transform this plain boiled ham into a honey-glazed roast gammon.

Boiling gammon takes 30 minutes to roast; this cooking time applies to all boiled gammon joint sizes.

The gammon is already cooked; all that remains is to roast the fat layer and add a delicious glaze.

Gammon Pressure Cooker Method

To expedite the cooking process, use an instant pot or pressure cooker to cook the gammon joint. Leave it alone for the allotted time without checking in.

If you don't already have a pressure cooker, I highly recommend the Pressure King Pro; we've had ours for three years and use it every week.

The recipe card includes instructions for both pressure cooking gammon with a pressure king pro or an instant pot and pan boiling the gammon.

Gammon's skin is being removed.

After the gammon has boiled, remove the thick skin while leaving the fat layer intact.

The gammon fat will be super soft and ready for diamond scouring; we then added cloves for extra flavor.

In all honesty, we went a little overboard with the cloves here, but we wanted the photo to look even and well-covered. You can use half of what we did.

Honey-mustard glaze

This honey and mustard glaze is a simple glaze for roast gammon that can be made with equal parts runny clear honey and English mustard.

You could also try our Sticky Beer and Honey Glaze as an alternative.

Pour your desired glaze over the top of the gammon joint, reserving some for halfway through roasting.

I also recommend putting a layer of foil under the gammon joint because the honey is difficult to clean off the baking tray.

How long should you bake glazed gammon?

Bake glazed gammon for 30 minutes in a preheated oven at 180°c fan / 200°c / 400°f; halfway through, add more glaze to the top.

When finished, remove from oven and tent loosely with foil for 10 minutes before carving.

You have to admit that it is a masterpiece roast dinner to serve at the Christmas dinner table.

Suggestions for Gammon Serving

A roast gammon is obviously ideal for a traditional Sunday roast dinner with Roast Potatoes, Roasted Parsnips, and Yorkshire Puddings, as shown below.

  • 2 kg 4 12 pound unsmoked Gammon/Ham Joint
  • 500 ml 2 cups of water
  • 2 Bay Leaves
  • cloves
  • 4 tablespoon Honey
  • 4 tablespoon Mustard of England
  • Soak the gammon joint in cold water for a few hours, we usually do it overnight, but if you don't have time, rinse it under cold water a few times to remove excess saltiness.
  • Place the gammon joint in a deep pan, fat side up, and cover with water. Bring to a boil with the bay leaves. Reduce the heat to a low simmer and leave to cook for 12 hours, uncovered. If the gammon is sticking out of the water, add more water.
  • Honey and mustard glaze ingredients should be combined.
  • After 12 hours, remove from pan and set aside for 10 minutes. Taking the netting off the boiled gammon joint
  • Remove the skin and rind from the gammon, leaving a juicy layer of fat behind.
  • With a sharp knife, cut diamonds into the fat layer of the gammon.
  • Insert cloves into the four corners of each diamond.
  • Cover a baking sheet with foil before placing the gammon joint on top. Pour the majority of the honey and mustard glaze over the top, reserving a small amount to reglaze halfway through baking.
  • 15 minutes in a preheated oven at 180°C fan / 200°C / 400°F
  • Reglaze with the remaining honey and mustard glaze.
  • Cook for another 15 minutes, keeping an eye on it and removing it sooner if the honey glaze begins to burn. Cover loosely with foil and set aside for 10 minutes before carving.
  • Carve gammon slices to the desired thickness.
  • Serve with your preferred sides.
  • Drain the water and place the gammon fat side up in the pressure cooker pot. Pour 500 ml of water over the top and add the bay leaves; if it does not cover the gammon, that is fine.
  • Close the lid and turn the pressure valve to the closed position. Set the pressure cooker to the meat setting and cook for 50 minutes.
  • Allow 10 minutes for natural release after the pressure cooker has finished cooking. Remove the meat from the pressure cooker with care. Continue from step 3 to oven roast the pressure-cooked gammon.
Adjust the cooking time if you have a different size joint. Bring to a boil, then reduce to a simmer for 45 minutes per kg / 20 minutes per pound. Cook the following joint sizes on the stovetop for the time indicated below, then bake for 30 minutes to crisp off.
  • 1kg - 45 min
  • 1hr 30 min - 2kg
  • 3kg - 2 hours and 15 minutes
  • 4kg - 3hr
  • 3hr 45min - 5kg
Regardless of the size of the joint, the time in the oven to brown the glaze off is always about 30 minutes. Pressure cook for 25 minutes per kg / 11 minutes per pound. Allow 10 minutes for natural joint release on all joint sizes. The following pressure cooker joint sizes require the time indicated below, plus 10 minutes for natural release and 30 minutes in the oven to crisp off.
  • 1kg - 25 min
  • 2kg - 50 min
  • 3kg - 1 hour 15 minutes
  • 4kg - 1 hour 40 minutes
  • 5kg in 2 hours and 5 minutes
